It's best to buy local raw honey whenever you can. Locally grown because it's produced by bees which are from the environment in which you live. It is always best to grow or consume foods from the area in which you live as they contain the immune stimulating properties needed for your body to adapt to its environment.

What is raw honey?
Raw honey is the concentrated nectar of flowers that comes straight from the extractor; it is unheated, pure, un–pasteurized, unprocessed honey. When honey is heated, its delicate aromas, yeast and enzymes which are responsible for activating vitamins and minerals in the body are partially destroyed. Heat treated honey is not as nutritious as raw honey. Raw honey will usually granulate and crystallize to a margarine-like consistency after a month or two. This crystallized honey is easy to put back into it's liquefied state with gentle slow heating.

Naturally Crystallized Honey - Naturally crystallized honey is honey in which part of the glucose content has spontaneously crystallized. It is safe to eat and use as it is or you can re–liquefy it by placing it on a bowl of warm water until it melts back to it's liquid state..
